3 Ingredient Peach Cobbler

This recipe is so ridiculously easy but delicious and is perfect for those cold Winter nights. I tried it out for the first time the other day and will be trying it again with different variations for sure, it’s so good.

Just set the slow cooker and leave basically. SIMPLE. The most difficult part is waiting for it to be ready so you can enjoy all that deliciousness. Although it takes a few hours I love that I can grab my slow cooker out and throw the ingredients in and set it and forget for a few hours with no prep work and at the end have something completely delicious.

I served mine up with some Vanilla Soy Icecream but you can choose whatever Vegan Icecream you like but the contrast between cold creamy Icecream with the warm pudding is a lovely balance.

Peach Cobbler with Vanilla Soy IceCream

Served up with some Vanilla Soy Icecream.

RECIPE

Prep Time: Less than 5 mins

Cook Time: 3-5 hours in Slow Cooker (depending on whether you have it on low or high)

Ingredients:

– 2 x 400gm tins of Sliced Peaches

– 100 gms Vegan Butter chopped into pieces

– Vegan Gluten Free Vanilla Cake Packet Mix

OPTIONAL: Serve it with Vanilla Vegan Icecream. I used this one.  You can use whatever Vegan Ice Cream you like but I do think it’s worth having Ice Cream with it to balance it.

How to Prepare:

  • Grab out your Slow Cooker and empty the 2 cans of tinned peaches into the bowl of the Slow Cooker. I’ve seen some recipes where they say just use the juice of 1 of the tins along with the peach slices so it’s not too liquidy but I ended up using both. When I first dished up I thought it was going to be too liquidy but I found the juices sunk into the cake beautifully once I served up so it’s up to you.
  • Open up your cake mix and sprinkle that across the peach slices and juices.
  • Add the butter across the top of the cake mixes in random dobs. It will sink into the cake mix and juices as it cooks
  • Turn the Slow Cooker to either Low or High. I cooked it on Low for about 4 hours. I would guess if you set it to High it might be ready in 2-3?
  • Voila that’s literally it. Then serve up and add ice cream and apply to face. ENJOY!
