Broccoli & Red Lentil Soup – Gluten Free Aussie Vegan
A warm welcome to my Gluten Free Aussie Vegan website. Today I’m going to share with you a winter recipe called Broccoli & Red Lentil Soup. This is a tasty thick and chunky soup although if you prefer your soups smoother you can blend it.

RECIPE

Cook Time: 30 mins
Ingredients:
– 1-2 Tbsp Vegetable Oil
– 1 Onion chopped
– 1 tsp Cumin Seeds
– 1 tsp Black Mustard Seeds
– 1/2 cup Red Lentils (rinsed & drained)
– 2 cups of Broccoli stalks (I did mine pretty chunky in the video you can cut them smaller
– 2 cups Water
– 1/2 tsp salt
– 1 cup plant based milk. I used Almond but you can also use Soy Milk.
– 1 Tbsp Soy or Tamari Sauce (check label to ensure gluten free and vegan)
– 1 Tbsp Lemon Juice
– 1/2 tsp Garam Masala
– 1/2 tsp Turmeric
– 1/2 tsp Chilli Powder or flakes (optional)
– Salt & Pepper at the end to taste
How to prepare:
- Heat the vegetable oil in a generous size pot at medium heat
- Add in the chopped onion and saute’ for a couple of minutes until it starts to go transparent
- Add the cumin seeds, black mustard seeds & rinsed red lentils and mix through and continue to saute’ for another minute or so until the seeds start to pop a little. Keep stirring. You may need to add a little more oil or water if it starts to stick to the bottom of the pot as happened to me.
- Now it’s time to add in the 2 cups of broccoli and 2 cups of water. Bring to the boil and then cover and simmer for 20-25 minutes until the broccoli and red lentils are cooked.
- Then add in the almond or soy milk along with the soy sauce, lemon juice, turmeric, garam masala and chilli powder and mix well.
- Let it simmer for a few more minutes to ensure the spices have infused into the soup nicely. Taste test and adjust the flavours as needed. If you want a smoother soup then blend now. Otherwise it is ready to serve up.
I love my soup over a bed of rice but you of course can have it on its own, with some bread or an equally tasty accompaniment.
