    Vegan Potato Curry

So one thing I’ve discovered since going vegan 3 years ago….and that is how much I love curry. I didn’t realise just how much until I went to go edit this a few months back and saw how many curry recipes I’ve already shared so far like Mango Tempeh Chickpea Curry, Broccoli and Pea Korma & Rogan Josh. So I decided to space them out a bit more. I didn’t want it be overkill…even if they are all totally tasty. But I think now that we’re halfway through Autumn and the weather is starting to cool down, it’s perfect timing to share something warm and tasty. You will love this…

    Chickpea Meatballs

So in the past when I’ve had a hankering for an Italian style gluten free, Vegan dish I’ve made Lentil Bolognese. I’ve also made Spaghetti Bolognese using TVP as the ‘beef mince’ substitute and I always really enjoy it. But I also sometimes crave some meatballs in a tomato based sauce. I’ve already done a meatball recipe before using TVP and it was delicious. Check out the recipe here if interested. For a change, I decided to test out a Chickpea based meatball recipe and lemme tell ya? This is EQUALLY as tasty meatball recipe as my TVP one…so try either depending what mood you’re in.

    Roasted Red Capsicum Hummus Dip

This gluten free and vegan roasted Red Capsicum Hummus dip is so easy and tasty to make you’ll wonder why you ever bothered with store bought. 🙂 The roasted Red Capsicums just give it that nice bit of extra caramelised flavour. When I made mine the other day I only did half the recipe and it STILL made a decent amount. As you can see above I made some roasted potato wedges to dip into it. This hummus dip will go perfectly with other things like crackers, chips, carrot sticks, celery to dip into it. Recipe:

Vegan Rogan Josh – Gluten Free

So I love a good curry and I don’t mind chickpea curries and I’ve even enjoyed vegetable curries, you know where the ‘meat’ swap might be pumpkin, cauliflower or Sweet Potato…but I have to admit I have missed having a curry where there is something with that meaty, chewy consistency and it’s not always easy to find Vegan replacements that are also Gluten Free as so many of the faux meats have wheat. Well I missed it UNTIL I was watching a recipe on The Happy Pear channel and spotted this little ripper of a recipe for Rogan Josh. Not only does it have Chick Peas in it but…
