Vegan Sticky Mushrooms
So I had some big mushrooms in the fridge the other day and jumped online for inspiration as I’m sure many of us do. I stumbled across this recipe for sticky apricot mushrooms and was immediately intrigued by the thought of orange and apricot paired with mushrooms, I wasn’t sure if that combo would work but I was definitely salivating over the picture. So I thought I would try out the recipe and share it with you my gluten free vegan friends. I also had some asparagus in the fridge so I roasted them along with it and also made Mexican Elote street corn and rice. I quite enjoyed it,…

Raspberry & Passionfruit Muffins
So my neighbours put in a passionfruit vine along our adjoining fence and I gotta say, I definitely have no complaints, especially when some months later I went walking along the fence and found 9 fresh passionfruit had dropped to the ground on our side ready to be eaten. The skin wasn’t quite wrinkled on them yet so i gave them some days to wrinkle up and pondered what I would make with them…and stumbled across the idea of Raspberry and Passionfruit muffins. The original recipe I found wasn’t gluten free or vegan so of course I have made a few minor adaptions, but the end result is delicious. Try…

Peanut Butter and Chocolate Chip Cookies |Gluten Free Aussie Vegan
Now I have to admit, I don’t really have much of a sweet tooth. I crave savoury food more. So you’re likely to see more savoury recipes here in the Gluten Free Vegan kitchen. Having said that, every now and then I’ll randomly get a craving and have to satisfy it. That happened the other day when I was making some lentil pancakes with lentil flour. While the pancakes were cooking I happened to glance on the back of the package and saw a recipe for Peanut Butter Chocolate Chip Cookies using Lentil Flour and Almond meal instead of normal flour and I was intrigued. I had to adapt the…

Roasted Red Capsicum Hummus Dip
This gluten free and vegan roasted Red Capsicum Hummus dip is so easy and tasty to make you’ll wonder why you ever bothered with store bought. π The roasted Red Capsicums just give it that nice bit of extra caramelised flavour. When I made mine the other day I only did half the recipe and it STILL made a decent amount. As you can see above I made some roasted potato wedges to dip into it. This hummus dip will go perfectly with other things like crackers, chips, carrot sticks, celery to dip into it. Recipe:

Vegan Mushroom Puff Pastry Parcels
HAPPY NEW YEAR and welcome to Gluten Free Aussie Vegan. So I bought all the ingredients to make a Mushroom Wellington at Christmas. I’ve made it as my main for the past 2 years in a row and always love it, but THEN I noticed Woolworths released a Vegan Gluten Free Plant Based Loaf and I got excited and bought that too, keen to try it out. I thought I would make both….but well given I’m the only Vegan in my family, I was the only one eating the loaf. It took me a few days to get through it all and…with all the hustle and bustle through Christmas with…

How to make Vegan Banana Blueberry Bread – Gluten Free
So I was really craving banana bread the other day and had some really ripe bananas to use up so I set about finding a good Vegan Gluten Free Banana Bread and stumbled across a recipe that also mixed blueberries in it….which I also had on hand and needed to use up haha so win/win. π I thought, what a perfect recipe because instead of adding processed sugar like you might normally in other banana bread recipes, the sweetness from the bananas and blueberries makes this super moist, delicious bread a must! To top it off it has slivered almonds across the top which once they’re roasted in the…

Elote – Mexican style Street Corn
So I’ve come across this recipe on google and pinterest and seemingly all over the place and every time I see it i think OH I have GOT to try that. The colours really call out to you, the red, the yellow. It just looks vibrant and juicy to me. So I finally tried it and it is my newest food addiction. SO GOOD. What I love about this is that it is relatively simple and quick to prepare and only needs a few ingredients but the flavour is like BAM. I also made the Vegan Parmesan from scratch (naturally Gluten Free) which I will link the recipe for it…
